Kerabu Ikan Bilis Rangup

Bahan-bahan (Ingredients)

  • 1 cawan ikan bilis – digoreng garing
    (1 cup anchovies – fried until crispy)
  • 1 biji bawang besar – dihiris nipis
    (1 large onion – thinly sliced)
  • 10-15 biji cili padi – dihiris halus
    (10-15 bird’s eye chilies – finely sliced)
  • 1 kuntum bunga kantan – dihiris halus
    (1 torch ginger bud – finely sliced)
  • 2 batang serai – dihiris nipis
    (2 stalks lemongrass – thinly sliced)
  • 1 biji tomato – dibuang biji & didadu
    (1 tomato – deseeded & diced)
  • Segenggam daun ketumbar – dihiris
    (A handful of coriander leaves – chopped)
  • 3-4 sudu besar jus limau nipis
    (3-4 tbsp lime juice)
  • 1 sudu besar sos ikan
    (1 tbsp fish sauce)
  • 1 sudu kecil gula atau secukup rasa
    (1 tsp sugar or to taste)

Cara-cara (Instructions)

  1. Goreng ikan bilis sehingga benar-benar garing, angkat dan ketepikan supaya sejuk.
    (Fry the anchovies until very crispy, remove and set aside to cool.)
  2. Di dalam mangkuk besar, satukan jus limau nipis, sos ikan, dan gula. Kacau sehingga gula larut.
    (In a large bowl, combine lime juice, fish sauce, and sugar. Stir until the sugar dissolves.)
  3. Masukkan bawang besar, cili padi, bunga kantan, serai, dan tomato ke dalam mangkuk. Gaul rata.
    (Add the onion, bird’s eye chilies, torch ginger, lemongrass, and tomato into the bowl. Mix well.)
  4. Apabila sedia untuk dihidang, masukkan ikan bilis goreng dan daun ketumbar.
    (When ready to serve, add the fried anchovies and coriander leaves.)
  5. Gaul pantas supaya ikan bilis bersalut dengan bahan perasa tetapi tetap kekal rangup.
    (Toss quickly so the anchovies are coated with seasoning but remain crunchy.)

  • Kekal Rangup: Hanya campurkan ikan bilis ke dalam bahan hiris sejurus sebelum dihidangkan untuk mengelakkan ia menjadi lembek.
