Bendi Goreng Belacan

(Stir-Fried Okra with Shrimp Paste)

Bahan-bahan (Ingredients)

  • 10-12 batang bendi – dipotong serong
    (10-12 okra – sliced diagonally)
  • 1 sudu besar udang kering – direndam & ditumbuk kasar
    (1 tbsp dried shrimp – soaked & coarsely pounded)
  • Bahan Tumbuk: 3 ulas bawang putih, 4 biji bawang merah, 5 biji cili padi & 1 inci belacan bakar
    (Pounded Ingredients: 3 cloves garlic, 4 shallots, 5 bird’s eye chilies & 1 inch toasted shrimp paste)
  • 1 sudu besar sos tiram
    (1 tbsp oyster sauce)
  • Garam & gula secukup rasa
    (Salt & sugar to taste)

Cara-cara (Instructions)

  1. Panaskan minyak dan tumis bahan tumbuk bersama udang kering sehingga garing dan pecah minyak.
    (Heat oil and sauté pounded ingredients with dried shrimp until fragrant and oil separates.)
  2. Masukkan sos tiram dan kacau rata.
    (Add oyster sauce and stir well.)
  3. Masukkan bendi. Goreng menggunakan api besar dengan pantas (sekitar 2-3 minit).
    (Add okra. Stir-fry quickly over high heat (about 2-3 minutes).)
  4. Perasakan dengan sedikit garam dan gula. Jangan tambah air supaya bendi tidak berlendir.
    (Season with a bit of salt and sugar. Do not add water to prevent the okra from becoming slimy.)
  5. Angkat dan hidangkan segera semasa masih rangup.
    (Remove from heat and serve immediately while still crunchy.)

  • Tips Kurangkan Lendir: Goreng bendi tanpa minyak (sangai) sebentar sebelum menumis, atau pastikan kuali benar-benar panas dan jangan tambah air semasa memasak.
    (Anti-Slimy Tip: Dry-fry the okra briefly before sautéing, or ensure the pan is very hot and avoid adding water during cooking.)
