Bahan-Bahan: (Ingredients)

  • 500g Nangka Muda (Dipotong dan direbus sehingga empuk)
    (500g Young Jackfruit (Cut and boiled until tender))
  • 500g Ceker Ayam (Dibersihkan dan direbus sehingga lembut)
    (500g Chicken Feet (Cleaned and boiled until soft))
  • 1 liter Santan Pekat
    (1 liter Thick Coconut Milk)
  • 3 sudu besar Kerisik
    (3 tablespoons Toasted Coconut Paste)
  • 2 keping Asam Keping
    (2 pieces Dried Tamarind Skin)
  • 2 helai Daun Kunyit (Dihiris halus)
    (2 Turmeric Leaves (Finely sliced))
  • 4 helai Daun Limau Purut
    (4 Kaffir Lime Leaves)
  • Garam dan Gula Melaka secukup rasa
    (Salt and Palm Sugar to taste)

Bahan Kisar: (Blended Ingredients)

  • 15-20 tangkai Cili Kering (Direbus)
    (15-20 Dried Chilies (Boiled))
  • 10 biji Bawang Merah
    (10 Shallots)
  • 4 ulas Bawang Putih
    (4 cloves Garlic)
  • 2 inci Halia
    (2 inches Ginger)
  • 2 inci Lengkuas
    (2 inches Galangal)
  • 2 inci Kunyit Hidup
    (2 inches Fresh Turmeric)
  • 4 batang Serai
    (4 stalks Lemongrass)

Cara Penyediaan: (Instructions)

  1. Tumis Bahan: Panaskan minyak dan tumis bahan kisar sehingga pecah minyak dan garing.

  2. Masukkan Santan & Ceker: Tuangkan santan dan masukkan ceker ayam yang telah direbus. Biarkan mendidih seketika.

  3. Masukkan Nangka: Masukkan nangka muda yang telah direbus empuk, asam keping, dan daun limau purut.

  4. Perasakan: Masukkan kerisik, garam, dan gula melaka. Kacau rata di atas api sederhana.

  5. Keringkan Rendang: Masak sehingga kuah memekat dan kering mengikut citarasa anda. Akhir sekali, taburkan hirisan daun kunyit.
