Daging Paprik Ala Thai

Bahan-bahan (Ingredients)

  • 300g daging – dihiris nipis
    (300g beef – thinly sliced)
  • 3 ulas bawang putih – diketuk
    (3 cloves garlic – bruised)
  • 1 biji bawang besar – dipotong baji/wedges
    (1 onion – cut into wedges)
  • 1 inci halia – dihiris halus
    (1 inch ginger – thinly sliced)
  • 2 sudu besar cili kisar
    (2 tbsp chili paste)
  • 2 sudu besar sos tiram
    (2 tbsp oyster sauce)
  • 2 sudu besar sos cili
    (2 tbsp chili sauce)
  • 1 sudu besar sos tomato
    (1 tbsp tomato sauce)
  • 3 helai daun limau purut – dicarit
    (3 kaffir lime leaves – torn)
  • 2 batang serai – diketuk
    (2 stalks lemongrass – bruised)
  • Sayuran: Karot, putik jagung & kacang panjang
    (Vegetables: Carrot, baby corn & long beans)
  • Sedikit kicap manis – untuk warna
    (A dash of sweet soy sauce – for color)

Cara-cara (Instructions)

  1. Rebus daging seketika dengan sedikit air sehingga empuk, kemudian simpan air rebusan tersebut.
    (Boil the beef briefly with a little water until tender, then set aside the beef stock.)
  2. Panaskan minyak dan tumis bawang putih, halia, dan serai sehingga wangi.
    (Heat oil and sauté garlic, ginger, and lemongrass until fragrant.)
  3. Masukkan cili kisar dan masak sehingga pecah minyak.
    (Add chili paste and cook until the oil separates.)
  4. Masukkan daging, sos tiram, sos cili, sos tomato, dan kicap manis. Gaul rata.
    (Add beef, oyster sauce, chili sauce, tomato sauce, and sweet soy sauce. Mix well.)
  5. Tuangkan sedikit air rebusan daging tadi mengikut kepekatan kuah yang diingini.
    (Pour in some of the reserved beef stock according to your preferred gravy thickness.)
  6. Masukkan karot, putik jagung, dan daun limau purut. Masak sehingga sayur sedikit lembut.
    (Add carrot, baby corn, and kaffir lime leaves. Cook until vegetables are slightly softened.)
  7. Akhir sekali, masukkan kacang panjang dan bawang besar. Perasakan dengan garam atau gula jika perlu.
    (Finally, add long beans and onion. Season with salt or sugar if necessary.)

  • Daging Empuk: Hiris daging melawan urat (grain) supaya daging tidak liat apabila dimasak pantas.
    (Slice the beef against the grain to ensure it stays tender during quick stir-frying.)
  • Aroma: Daun limau purut adalah bahan wajib untuk menaikkan aroma “Paprik” yang asli.
    (Kaffir lime leaves are a must-have ingredient to bring out the authentic “Paprik” aroma.)
  • Warna: Jika kuah nampak pucat, tambahkan sedikit lagi kicap pekat atau kicap manis.
