(Spicy Mamak-Style Fried Noodles)

Bahan-bahan (Ingredients)
- 450g mee kuning – dicelur sebentar & toskan
(450g yellow noodles – blanched & drained) - 3 ulas bawang putih – dicincang halus
(3 cloves garlic – finely minced) - 2 biji telur
(2 eggs) - 1 biji ubi kentang – direbus & dipotong dadu
(1 potato – boiled & cubed) - 2 keping tauhu goreng – dihiris nipis
(2 pieces fried tofu – thinly sliced) - Segenggam taugeh & sawi
(A handful of bean sprouts & mustard greens) - 2 sudu besar cili kisar
(2 tbsp chili paste) - 2 sudu besar sos cili
(2 tbsp chili sauce) - 1 sudu besar kicap manis
(1 tbsp sweet soy sauce) - 1 sudu besar kicap pekat
(1 tbsp dark soy sauce) - 1 sudu besar serbuk kari daging
(1 tbsp meat curry powder)
Cara-cara (Instructions)
- Panaskan minyak dan tumis bawang putih bersama cili kisar serta serbuk kari sehingga pecah minyak.
(Heat oil and sauté garlic with chili paste and curry powder until the oil separates.) - Masukkan ubi kentang rebus dan tauhu. Gaul rata bersama bahan tumisan.
(Add the boiled potato and tofu. Mix well with the sautéed base.) - Masukkan kesemua bahan sos dan sedikit air jika mahukan tekstur yang basah.
(Add all sauce ingredients and a bit of water for a moist texture.) - Masukkan mee kuning dan sayur sawi. Gaul pantas menggunakan api besar.
(Add yellow noodles and mustard greens. Toss quickly over high heat.) - Tolak mee ke tepi kuali, pecahkan telur di tengah, dan biarkan sedikit mengeras sebelum digaul rata dengan mee.
(Push noodles to the side, crack eggs in the center, let them set slightly before stirring into the noodles.) - Akhir sekali, masukkan taugeh, perasakan dengan garam secukup rasa, dan hidangkan bersama hirisan limau nipis.
