(Pineapple Prawn Coconut Curry Recipe)

Bahan-bahan (Ingredients)
- 500g udang segar – dibuang kotoran di belakang
(500g fresh prawns – deveined) - 1 biji nenas madu – dibahagi dua
(1 honey pineapple – divided into two) - 2 cawan santan pekat
(2 cups thick coconut milk) - 1 batang serai – diketuk
(1 stalk lemongrass – bruised) - Bahan Tumbuk: 5 biji cili padi & 1 inci kunyit hidup
(Pounded Ingredients: 5 bird’s eye chilies & 1 inch fresh turmeric) - Garam dan sedikit gula melaka jika nenas kurang manis
(Salt and a bit of palm sugar if the pineapple is not sweet enough)
Cara-cara (Instructions)
- Masukkan bahan tumbuk, serai, dan santan ke dalam periuk. Masak dengan api perlahan sambil sentiasa dikacau.
(Add the pounded ingredients, lemongrass, and coconut milk into a pot. Cook over low heat while constantly stirring.) - Apabila santan mula mendidih, masukkan potongan nenas. Biarkan nenas sedikit layu.
(Once the coconut milk starts to boil, add the pineapple pieces. Let the pineapple soften slightly.) - Masukkan udang dan perasakan dengan garam serta gula melaka secukupnya.
(Add the prawns and season with salt and palm sugar to taste.) - Masak sebentar sahaja sehingga udang bertukar warna merah. Jangan biarkan santan pecah minyak.
(Cook briefly until the prawns turn red. Do not let the coconut milk curdle/separate.)
