Popia Basah yang sempurna mestilah mempunyai kulit yang nipis dan elastik, dipadankan dengan sos yang pekat, pedas, dan manis, serta inti sayuran yang segar dan rangup.
(Perfect Soft Spring Rolls must have thin and elastic wrappers, paired with a thick, spicy, and sweet sauce, along with fresh and crunchy vegetable filling.)

Bahan-Bahan: (Ingredients)

A. Bahan Kulit (Wrappers):

  • 2 cawan Tepung Gandum
    (2 cups All-purpose Flour)
  • 1 biji Putih Telur
    (1 Egg White)
  • 1 cawan Air (Masukkan sedikit demi sedikit)
    (1 cup Water (Add gradually))
  • 1 sudu besar Minyak Masak
    (1 tbsp Cooking Oil)
  • 1 sudu kecil Garam & 1 sudu kecil Cuka (Rahsia kulit elastik)
    (1 tsp Salt & 1 tsp Vinegar (The secret to elastic skin))

B. Bahan Sos (Spicy Sauce):

  • 10-15 tangkai Cili Kering (Direbus & dikisar)
    (10-15 Dried Chilies (Boiled & blended))
  • 3 ulas Bawang Putih & 2 ulas Bawang Merah (Dikisar)
    (3 cloves Garlic & 2 cloves Shallots (Blended))
  • 1/2 cawan Gula Melaka / Gula Nisan
    (1/2 cup Palm Sugar)
  • 2 sudu besar Sos Cili
    (2 tbsp Chili Sauce)
  • Sedikit Garam & Air Asam Jawa
    (A pinch of Salt & Tamarind Juice)

C. Bahan Inti (Filling):

  • Sengkuang (Dihiris halus/sagat)
    (Jicama (Thinly shredded))
  • Karot (Dihiris halus/sagat)
    (Carrot (Thinly shredded))
  • Kacang Tanah (Digoreng & dikisar kasar)
    (Peanuts (Roasted & coarsely ground))
  • Bawang Goreng & Taugeh (Dicelur sekilas)
    (Fried Onions & Bean Sprouts (Briefly blanched))

Cara Penyediaan: (Instructions)

  1. Sediakan Kulit: Campurkan semua bahan kulit dan uli sehingga menjadi adunan yang kenyal (seperti doh roti yang lembik). Biarkan selama 1-2 jam. Panaskan kuali anti-lekat, ambil sejemput doh dan sapukan secara memutar di atas kuali nipis-nipis. Angkat apabila tepi kulit mula terangkat.
    (1. Prepare the Wrappers: Mix all wrapper ingredients and knead until it becomes an elastic batter. Let it rest for 1-2 hours. Heat a non-stick pan, take a handful of dough and “swipe” it in a circular motion on the pan thinly. Remove once the edges start to lift.)
  2. Masak Sos: Tumis bahan kisar sehingga pecah minyak. Masukkan gula melaka, sos cili, air asam jawa, dan garam. Masak dengan api kecil sehingga sos menjadi pekat dan berkilat. Sejukkan.
    (2. Cook the Sauce: Sauté the blended ingredients until the oil separates. Add palm sugar, chili sauce, tamarind juice, and salt. Cook over low heat until the sauce is thick and glossy. Let it cool.)
  3. Sediakan Inti: Tumis sengkuang dan karot dengan sedikit bawang putih sehingga layu sedikit. Perasakan dengan garam. Toskan air sayur supaya kulit popia tidak cepat koyak.
    (3. Prepare the Filling: Sauté jicama and carrot with a bit of garlic until slightly wilted. Season with salt. Drain any excess liquid so the wrappers don’t tear.)
  4. Melapis Popia: Ambil sekeping kulit, sapukan sedikit sos di tengah. Letakkan inti sayur, taburkan kacang tanah dan bawang goreng.
    (4. Layering the Popia: Take a wrapper, spread some sauce in the middle. Place the vegetable filling, sprinkle with peanuts and fried onions.)
  5. Melipat: Lipat bahagian kiri dan kanan, kemudian gulung dengan kemas. Sapukan sedikit lagi sos di atas popia jika suka.
    (5. Folding: Fold the left and right sides, then roll neatly. Spread a bit more sauce on top if desired.)

Tips:

  • Tambahkan udang geragau goreng atau telur hancur (scrambled eggs) ke dalam inti untuk rasa yang lebih enak.
    (Add fried dried krill or scrambled eggs into the filling for a richer taste.)
  • Pastikan sos benar-benar sejuk sebelum disapukan pada kulit popia untuk mengelakkan kulit menjadi terlalu lembik atau bocor.
    (Ensure the sauce is completely cool before spreading it on the wrappers to prevent them from becoming too soggy or leaking.)
